Double Chocolate Banana Nut Mini Muffins


This recipe came about for two reasons... One, bananas are one of the few fruits my toddler will eat
but I often end up with a couple that get overly ripe. Two, I like having something on hand to satisfy my chocolate cravings that possibly has some redeeming qualities.

I started out with a recipe I found online and then I changed it up a little bit to reduce the flour and sugar, and to add some additional nutritional goodness (eggs, nuts).

These mini muffins are pretty delicious and I like that they are such small servings. Perfect for toddlers or for moms who are trying to watch their portions.

Makes 24 mini muffins that are about 95 calories each IF you only add 1/2 cup each of chocolate chips and chopped walnuts.

Ingredients:
  • 2 very ripe bananas
  • 1/3 cup melted butter
  • 2 large eggs
  • 1 tbsp. vanilla
  • 1 tsp. cinnamon
  • 1 tsp. baking soda
  • 1/3 cup sugar
  • 1/3 cup cocoa powder
  • 1 and 1/3 cup flour
  • Chocolate chips and chopped walnuts to taste
Do it:
  1. Mix/beat together the wet ingredients (eggs, bananas, butter, vanilla)
  2. Add dry ingredients (besides chocolate chips and nuts) a bit at a time and mix well
  3. Stir in the amount of chocolate chips and nuts that appeal to you
  4. Grease mini muffin pan(s)
  5. Bake at 350 for approx. 15 minutes with the pan in a shallow water bath
  6. Let cool in the pan for a few minutes then gently release them from the pan and place on a cooling rack until you inevitably shove 1-2 in your mouth while the chocolate chips are still gooey. 

All read to go into the oven.
