Low Calorie Curried Egg Salad Wrap
Post-Easter, we had 18 hard boiled eggs in the fridge and I know we weren't the only ones. What to do with all these eggs? Luckily, my kids like hard boiled eggs and I can serve them for breakfast or lunch a couple times. We also throw them in our dinner salads. But honestly, my favorite thing to use them for is a curried egg salad which is quick, easy and low-calorie. I love it on a piece of dry toast, but it's also great as a wrap if you need something less messy in transit. I think my favorite thing about this meal is that while it is very low calorie (roughly 240 calories), it has a ton of flavor and satisfying protein.
Ingredients:
- 2 hard boiled eggs
- 1 tbsp. light mayonnaise
- 1 tbsp. water
- 1-2 tsp. chopped chives to taste
- 1 tsp. curry powder
- 1/4 tsp. cayenne pepper
- 1/4 tsp. garlic powder
- Salt & Pepper
- 1 low-carb tortilla wrap (I use the L'Oven ones from Aldi which are 60 calories each) or piece of dry toast
Directions:
- Roughly chop the hard boiled eggs
- Mix eggs, mayo, water, chives, and seasonings in a bowl
- Spoon egg salad into a tortilla or onto a piece of toast
